  • 4–5 fresh strawberries (washed with the green tops removed)
  • 1–2 tsp honey or maple syrup (optional)
  • 3 grams of matcha powder (around 1 tsp)
  • 60ml hot water (80°C)
  • 150 milk of your choice
  • Ice cubes

Iced Strawberry Matcha Recipe

Step 1: Make the strawberry mash

Cut the strawberries into small pieces and place them in a small saucepan with the sugar and water. Cook over medium heat for around 4–6 minutes, stirring occasionally until the strawberries soften.

Using the back of a fork or spoon, gently mash the strawberries until you have a soft, slightly chunky texture.

Allow the strawberry mash to cool completely.

Step 2: Whisk the matcha

Sift 3 grams of matcha powder into a bowl to remove any lumps. Pour in the hot water (around 80°C) and whisk in a quick zigzag (M or W) motion until smooth and frothy.

Tip: Use a temperature-controlled kettle to heat the water to the correct temperature.

Step 3: Assemble the latte

Spoon the cooled mashed strawberry into the bottom of a glass. Fill the glass with ice and pour in your milk. Slowly pour the whisked matcha over the back of a spoon to create beautiful layers.
